Sopa Azteca Recipe
Sopa Azteca is probably one of abuela’s favorites! The Sopa Azteca is a staple traditional Mexican dish that combines the creamy taste of avocados with tortillas.

Ingredients
- 1 large ancho chiles.
- 1 can of diced tomatoes
- Chopped white onions and cloves.
- 2 tablespoons of canola oil
- 5 cups of chicken broth
- 4 cup of shredded chicken breast
- 6 thinly sliced corn tortillas
Instructions
- Blend diced tomatoes, onions, and garlic with soaked chiles.
- Transfer the blended mix in heated oil over medium heat.
- Let it thicken for 8-10 minutes.
- Now, add the cilantro and the chicken broth. Bring to a boil.
- Once done, let it simmer by reducing the heat to medium-low. Add the pepper, salt, and chicken, and cook for an additional for 10 more minutes.
- Reduce the heat to medium-low and simmer. Add the salt, pepper, and chicken. Cook for 10 more minutes.
- While doing this, heat about 4 cups of oil using a large pot.
- Fry tortillas in the hot oil until it’s brown and crispy. Drain the excess oil with paper towels.
- Serve and add tortilla chips and any other side dish of your choice.
